WIPE fillets of fish, cut in individual servings, season and roll in corn meal. Cut 4 half-inch slices of fat salt pork in 1/2-inch dice and try out in hot frying pan. Remove pork scraps to center of platter and saute the fish until well browned on both sides. Put on hot platter and garnish with parsley.
