WIPE or rinse fillets of fish, cut in individual servings, season, dip in flour and cook in a frying pan with just enough butter to prevent burning. Remove to hot platter and to fat in pan add 4 tablespoons butter and stir until well browned. Then add 1 teaspoon lemon juice and a few grains pepper and salt if necessary. Strain over the fish and sprinkle with finely chopped parsley.
