3. Fried Fillets with Sauce Tartare

WIPE fish, cut in individual servings, sprinkle with salt, dip in flour, then coat with 1 egg white beaten with 1 tablespoon cold water and lay on a mound of sifted dry bread crumbs. Sprinkle bread crumbs on the top and shake off the superfluous crumbs, put in frying basket until serving time. Heat deep fat to 375 degrees F. or until a piece of bread will brown while you count 60. Lower fish slowly into the fat so that it will not boil over, reduce heat and let cook 5 to 8 minutes or until well browned. Garnish with parsley and lemon and serve Sauce Tartare separately.

Sauce Tartare

1/2 teaspoon onion
1 teaspoon pickle
1 olive
1 teaspoon parsley
1/3 cup mayonnaise dressing
1 teaspoon capers
1 tablespoon tarragon vinegar

CHOP onion, pickle, olive and parsley very fine, add to the mayonnaise dressing with the capers, add vinegar slowly and more salt and cayenne if needed.
