2. Broiled Fillets of Fish

WIPE or rinse fish, season, put on well-greased tin sheet, brush with melted butter and place under a gas flame or electric broiler for 5 minutes or cook until well browned. With a broad spatulas turn fish over, brush with butter and broil until brown on the other side. With a coal range, put fish in well-greased fine wire broiler and cook over a bed of coals turning frequently until brown. It will take 5 to 8 minutes. Spread with Maitre d’Hotel butter and garnish with thin slices of lemon sprinkled with chopped parsley.

Steamed Fish Fillets

Maitre d’Hotel Butter

3 tablespoons butter
Few grains pepper
1/2 teaspoon salt
Lemon
1 tablespoon parsley

WORK butter with small wooden spoon until very creamy, adding salt and pepper. Cut lemon in half and from each half cut 2 slices. Cut edges in points. From the ends of the lemon squeeze 3/4 tablespoon juice and add slowly to the butter. Chop parsley, put 1/2 tablespoon with the butter and use the remainder to sprinkle lightly on the lemon slices. A bit of red or green pepper cut in bits may be added to the butter.
