COVER bottom of baking dish with thin slices of fat salt pork, cover pork with onion very thin slices of onion and cover onion with fillets of fish cut in pieces for serving. Brush with butter and sprinkle with 1/2 cup cracker crumbs mixed with 2 tablespoons melted butter. Place over this narrow strips of fat salt pork and bake in a moderate oven or at 35o degrees F. 50 minutes or until crumbs are brown and fish is cooked through. Remove carefully to platter.
