Cut filets of fish in individual servings, dip in milk and in sifted dry bread crumbs. Put in baking dish and bake 25 minutes or until crumbs are brown. Place on serving dish, surround with egg sauce and garnish with hard-cooked egg white cut in rings, egg yolk rubbed through a strainer, lemon cut in fancy shapes, and parsley.

ADD drawn butter sauce slowly to 1 or 2 egg yolks, return to saucepan and stir
over hot water until slightly thickened.

1/3 teaspoon salt
Few grains pepper
1 teaspoon lemon juice
